To use video game terminology, Archer is a glass cannon. He works well with sneak attacks or from range, but he can easily get overpowered in hand to hand combat.

Well, he is a man that loves swords after all.

Archer is noted to have incredible defense with his twin swords, but when he is blocking his opponent's blows he isn't doing anything useful with his Projection ability. He is against the ropes against Lancer and can only start using bigger moves when Lancer gives him some room, HF Shirou also couldn't use Projection against Kotomine because that would leave an opening and he would instantly die. On that end, walking aroudn with swords for self defence is not utterly stupid, but that's not where Archer shines.

In Hollow Ataraxia he finally uses his bow exclusively and murders the protag a number of times.

To add to that, apparently Archer favors K&B so much that not only he managed to create a special move with them, but he can actually summon them without leaving an exploitable opening.

But then, why doesn't HF Shirou summon K&B against Kotomine? While HF Shirou has most of Archer's skill, he can only copy his affinity with K&B he's summoned them.

So HF Shirou can use the six sword cut, which require comboing K&B projections once he's summoned K&B, but that first summoning will leave an opening.

Archer can't project Caliburn. Shirou needed Saber's memory to project it in Fate route, and it was a one time thing like projecting the gem sword in Heaven's Feel

He was way beyond his limit by that point. Digging into Archer's memory in Sparks Liner High nuked his brain the moment he understood the meaning behind Triple Linked Crane Wings.

Projecting fake!excalibur immediately after beating Kotomine killed him, but his body continued swinging. If he tried K&B against Kotomine, he would've died right there.

He was effectively invincible while defending that bridge from the high ground spamming Hrunting. Without a surprise Rho Aias to tank Hrunting, as well as Shirou's prior knowledge of previous loops, and a command spell assisted Saber charge, they wouldn't have breached his defeense.
