Can't pick just one. 7, 3, and 5 are all equally 10/10 for completely different reasons.

Papikana because she carries the show and kicks everything into motion

Sayuri; for so little screentime she has a lot of character nuance and her outfits and reactions are always top-tier. I feel like you can tell the staff loved her but she wasn't important enough to focus a lot of the show on, so instead you just get bits of her details showing.

Episode 7's, because it's the only non-lethal one (as far as we know - Yayaka got an amorphous from somewhere so maybe I'm wrong). Unfortunately we don't know if the Papikas are strictly part of the PI, or part of Cocona's interaction with the PI. The PI might show the person who has entered it fragmented personalities of the person closest to them? If so, definitely the comfiest.
Second best choice is probably the PI from episode 1. The frosted trees don't seem hostile, while being easily avoided. And the snow didn't seem to be cold, either.

Cocona is the one who's headspace the audience most occupied and her perspective was done so well that I like her the best, Papika is a close second though.

Iro as both a character and an explanation tool for the mechanics of PI and the flaws of Cocona's perspective

Any but episode 9's, if I could I'd pick the flip flappers version of reality that always seemed a bit "infected" by PI with it's blob bunny rabbits, huge ferns and flying surfboards.
