I don't see why not. So far, nothing has happened in Super that would've contradicted DBZ's ending.

As for the whole slew of characters that joined the main cast (Beerus, Whis, Jaco, etc.), you could just explain their lack of presence in Z with a simple "they were too busy to show up."

It hasn't been contradicted or retconned yet, but I hope it will be. I think there is a good chance it will be though. Super's ratings are good in japan so I see no reason for it to not at least go past end of z if it doesn't outright retcon it.

Actually, I find that scene problematic for other reasons.

I don't think it's unusual that Goku is aware of Uub's existence. He doesn't mention Uub by name, but he does recall wishing for Evil Buu to be reincarnated as a good person. I don't think that part is inconsistent.

What I DO find inconsistent is that they seem to believe Uub is currently a newborn. He should be older than Pan (who is currently a baby in Super). Several sources say that Uub is about 5 years older than Pan.
