I think you're assuming that it's undermining the theme of human will when, if anything, it's actually strengthening it. The fact that Guts has these forces, spiritual or demonic, threatening his humanity - that he could possibly end up suffering the same fate as an apostle or the Skull Knight - just further reiterates how important his humanity is.
