The reality was Aki was a horrible monsterous human being before she met the MC, she has bullied and tormented the maid her whole life.

What flipped the maid's switch was Aki talking about how she really apreciated the MC as he's been the only one there for her. The Maid is basically a slave of Aki's family, and has been forced to be Aki's toy since she was born. Aki litterally has tortured the maid since birth, so for the Maid who was barely hanging on, to hear the Aki didn't even APRECIATE anything the maid did for her, rather, instead, she was craving the flabby folds of a pathetic little fatty, she snapped.

She took out her life's frustration and rage on the MC because her slave master only saw her as a slave/toy and held no appreciation for her. So she wanted to hurt AKI as much as she could. It wasn't really about hurting the MC, it was about hurting Aki for all the horrible things Aki has done to her.

Of course the maid felt guilty about it, because she's a good person at heart. She joined the MC's revenge plot because she was trying to force the two back together and fix what she did. Along the way she fell in love with the MC, and considered that her "punishment".

Think about that, she's Aki's slave, is bullied, abused and insulted by her 24/7 since birth and somehow the mangika made it narritively the "maid's" fault. AND ITS ALL A RETACON

The anime is consistent with the end of the manga, but if you READ the manga from the beginning a lot of little things are different which make it clear this "maid was aki" bullshit is a pure 100% retacon the mangika made at a later date, likely because the audience hated the main girl and wouldn't go for a MC - Aki end.

So the author Reticoned the whole story in order to kill off the maid as a love interest and force the Aki ending.
