Because of digital. It was exactly in year 2000, when everything became digital, that anime got ugly.
Less detail in the drawings, artificial looking outlines, bland colours, and recently, filters. And the backgrounds too, no longer beautiful paintings because its much easier to slap something together in photoshop. And CGI still looks awful, no exception.
The animators also forgot composition. They don't know how to put together a nice looking image anymore, everyone fell for the movement meme when what made anime special in the first place was that it showed the world that animation doesnt need to move as long as you compensate with nice pictures that are interesting to look at.

There's barely any isekai anime made at all, and light novel adaptations remain pretty uncommon also. Manga adaptations still dominate everything. The reason you're complaining about light novel adaptations is because they're actually popular. Despite how relatively few light novel adaptations there are per season, most of them end up being popular titles that are frequently talked about. Meanwhile there's always like 20 manga adaptations per season and maybe half will get any attention.

I've seen his fansub documentary twice. The first time I just assumed he was right, and the second time, years later, I disagreed with his statement that english shouldn't be edited into the anime. Because the fact that it is in Japanese is not a part of the vision of the creators. The intent is that you learn more by watching the pictures. Mainly because they decided that there should be more animation in anime. A lot of older shows tend to sacrifice animation fluidity for more detail, leading to the sorts of things in your image OP.

But honestly the whole "Old anime looks way better than new anime" stopped having weight after the mid 2000's when Japanese animators started to get the hang of digital colouring. If Kanaberi is anything to go by we can now have fantastic animation with that oldschool level of detail.
