I just watched an episode of an anime I thought was at worst decent, and yet I couldn't summon any emotional response to or from it. I just stared blankly after finishing it, and couldn't summon any energy to watch the next episode.
Is there something wrong with me?

No, particular emotions resonate differently from person to person, so even though you think you should be feeling something you might just be tired/watching too much at one time or you are just lacking attachment to the current situation. For instance, I loved the plot and direction of Steins;Gate, but at times i found myself disinterested or not caring, which didn't have anything to do with me not liking the story or the plot, but rather me just being distracted and tired and thus not 100% engaged. I'd recommend either...
a. Hold off on what you're watching and watch/rewatch a quick comedy series like konosuba to settle down your emotions
b. Take like a week off from watching anime
c. Watch one of your favorite episodes from another show that will help drive back emotions, like for me it would be episode 18 of after story or something
