There will never be a good portrayal of knights in anime because Japan is incapable of comprehending anything that isn't to do with Japan.

Knights were just the equivalent of the people who pays for equipment, weapons and skins in a f2p game.

Most fantasy anime is more Renaissance than Medieval (or is a grab bag that pulls whatever it wants from every era). Of course their knights are going to be noblemen with fancy coats.
