It, of course, was not literally the mother, just a facsimile of her personality: friendly, outgoing, carefree, happy, loving. Inner Moka was in a rough shape.

The ending was Outer Moka was stripped away, leaving only the "real" Inner Moka. However, that personality began to acquire similar traits and was coming out of her shell.
...doesn't change the fact that what the MC fell in love with was Moka's mom, not Moka.

It's been a long time so I may be remembering things wrong, but basically:
The real Mokamom (Akasha) is mostly sealed within the Big Bad after she tried to destroy him a long time ago.

The rosario she gave her daughter (Moka) to protect her contains a shard of herself.
"Outer Moka" is actually Akasha's personality controlling Moka.
That means ever since she got that rosary, Moka took the back seat inside her own body, it's not a split personality situation where her true self was divided into her human-ish side and her hardcore vampire side like we thought.
Which is fucked up and I think Moka kinda forgot about what happened and isn't aware of whom the original is.

So with that piece of information, we learnt in retrospect that Tsukune has been flirting with Moka's mom all along and the real Moka probably thought herself to be the "fake" on and was content just watching from afar.

Now you might be thinking "it's just a personality shard forcing Moka to act like her mom, but it's actually still Moka".
The thing is, Tsukune reunited the rosary and the big bad's body, leading the true Akasha to be resurrected with all her "outer moka" memories and feelings.
So now not only is the rosary empty and Moka is just inner Moka, but the true Akasha still has the hots for Tsukune.

And Tsukune, after warping his mind around all that shit, says the one he loves is Akasha.

So yeah, basically Moka's mom cucked her own daughter

It's great, too, in the epilogue that while they kinda re-start their romance (Tsukune and "Inner" Moka) you can tell the development is going well as we see "Outer" Moka (Akasha) personality traits start showing through. As Moka begins to act more like her more fun mother, Tsukune is willing to give her a shot.

Plus, her dad outright admits that's it's totally okay for Tsukune to be the head of a harem of bitches; he did that, too. It's hard, though, so watch out. They get jealous.

I think you guys don't get it. It's not that Akasha is literally taking over Moka's personality from beyond the grave.
It's not like Moka is gonna turn back into Akasha in some fucked up body switch shit.
It's that the previously sealed off and repressed Moka is finally able to be her own person, with all her friends there to help.
She may not have literally been raised by her mother, but interacting with Outer Moka made her into a good person, like her mother.

Now that the seal is broken she's just finally got the opportunity to show herself to the world, and you know, just as most of us are she's a lot like her parent.

Not entirely accurate, Outer Moka was a fake soul created using Akasha as a template. Akasha could experience what Outer Moka experienced but not the opposite. Akasha herself doesn't directly effect Tsukune or Moka, never did.

All that's occurring at the end is that the fake soul, rather than being destroyed when Akasha left, is merged with Moka and she's inherited part of that personality. As for changing to suit Tsukune's desire, fake soul or no that's what grills do.
