The true end should also have been expanded more. The future and Soviet Union parts of the VN were some of the best, so I was hoping that the true end would actually show the events occurring from 2011-2036. It would have been interesting seeing the actual events of WW3 and how the world deteriorates into an apocalyptic landscape. Kurisu was funny, supportive and overall a really likeable character. Maho is at best funny for how little she knows of the gang and at worst just filling in the role of Kurisu in the character roster, since apparently Amadeus wasn't meant to do anything.

But then why lay out all the groundwork? They had all these destroyed world CGs and the older versions of the characters. In the end they VERY briefly touched on it with the true end with extremely vague shit like "it had taken 15 years to reach this point, it was such a long time, and at the same time felt very short" I felt like there was so much nonsense that should have been omitted in favour of surviving the WW3 war which leads to Okabe regaining his resolve and finally sending the D-mail from 2025.

For all the hype it had, in official art or otherwise, Amadeus just didn't do very much. The phone was useless, since you didn't get much texts, and when you did, they had no meaning and were few in number. Everything else was forcedly done. Amadeus should have had a bigger and more organized role.

One idea I had was, maybe, first routes are the "turn the phone off" path and make it mandatory, and then just show timeline in complete chaos from these constant world line changes, with Okabe basically being unable to do anything at all without changing the world line in weirdest ways, and constantly warping into places like the whole Soviet Union segment for extra chaos.
And make the purpose of it stabilising the timeline by dealing with Amadeus somehow. Make it not just a thing they did because "lol why not digital world is cold" but because they actually can't do anything with a timeline as unstable as it is. Like, they acknowledge they would be able to reach Steins;Gate from there, but at any moment timeline might suddenly warp into Gamma or something, and then Okabe would be alone again.
Make it a prerequisite for Okabe reaching S;G. Kinda like it was, but make it mandatory, and not a phone choice. Anime would in particular have an easy time with that.
And then the second half is the stable timeline where Amadeus stays in one hands, use it here to its full potential for Okabe healing somehow and make D-RINE always appear in this timeline if he goes past a certain point. And make both the bad ending and the best ending direct consequences of D-RINE and not just "this weird message I saw once and then forgot for ten years actually filled me with courage I never showed". D-RINE was a good idea, but the whole route basically has to not refer to it for some reason, and so they couldn't leverage the writing to make it important.
And also, Mayuri route was really underwhelming, now that I think about it, it kinda made sense for Okabe to change his mind, but at the time I was kinda confused about why he did it so quickly and cleanly. And the whole thing was a lot less of a climax than the end of "world-warping route" anyway, I wish it was at the same level if not greater. That's just the problem of structure, not internal consistency.

As someone who's faced failure in similar circumstances to Maho, I really think that's the sort of person her character was meant to speak to. Frankly, the entire message of Steins;Gate 0 is how to deal with failure in its many forms both with man vs self and man vs others. Failure is failure regardless of the specific details and what matters is how the person takes it rather than the content of the failure itself.

So, um, why is it so important that it is Okabe who saves the world? Couldn't Daru warp back in time, knock out Nakabachi, and then return back before anybody noticed? Like, sure he wasn't there at the time, but who would even care?
Oh wait, he couldn't. Why? Because basically almost everybody who's arguing for Steins;Gate existing actually never addresses Okabe's biggest right argument: the world line convergence.
Why does Suzuha never ever even try to address this? This is an argument that Okabe turns to constantly, and it's completely correct, nobody even thought that the convergence depends on perspectives so much.
The only two people to address it are Maho in Mayuri route (philosophically, with the whole "laws of the world are just equations" thing) and Okabe himself (with the method as "deceive the world"). Which is what basically makes the route "the true end". Because it actually tells him how the problem is solvable.

And it's weird that NOBODY except Okabe ever tries to think about it to convince him to save the world, they all just try to cheer on him harder, which has been proven not to work.

Think about it from Suzuha's perspective. She knows nothing about the past she's experiencing, since it was all before her time. She went back in time to secure the IBN5100, stop Y2K, and make sure her uncle does the thing he needs to do. When she finally gets to 2010 she finds out the man who the fate of humanity is relying on is basically a whiny bitch, there's nothing she can do except tell him to "get in the robot." World War 3 is going to happen if she doesn't, there's nothing else she can really tell Okabe since she'd be preaching to the choir.

From her point of view, there's no other option than to try again.

The movie, which I think I've heard isn't considered canon, is quite messy, considering the original S;G VN has a rather conclusive ending.

I can understand a sequel in which a different story, unrelated to the events of S;G takes place in the same world, and some (or all) of the S;G characters become involved, but a sequel that tries to somewhat continue the plot of S;G seems impossible to me (I mean, it's not impossible to make, but it would be very, very hard to make it good).

Gamma literally does not exist. It never happened. If it did, that's major changes to the setting.
For it to exist, Okabe would have to warp into Gamma at one point, and then warp back.
You could maybe do something like, say, begin in Gamma and say it was the original timeline, then have him warp to Beta for the beginning of S;G, but it would have huge ramifications to it, and I have no idea how he would be able to send anything to S;G Okabe anyway.
That would be quite an impressive betrayal, though.

Also, the fact that they would be moving out from S;G timeline would retroactively devalue original S;G and 0, where they spent all this time looking for the "ideal" timeline to land in.
Sure, they say "we don't know whether this timeline is ideal, we don't have time machine after all", but you obviously know it's supposed to be their great impact on history, even if nobody ever notices it, so obviously it wouldn't actually ever turn out to be a bad timeline. If there's an easy way to switch to a better timeline, then that means all this effort spent looking for S;G wasn't worth shit, and rambling of Okabe about "the choice of Steins;Gate" becoming real don't hold up anymore either.

Not enough hype and hijinks for the christmas party and new year's. We also needed drunk Maho, to contrast drunk Kurisu. Amadeus should have been more usable, like at the Christmas party and a bit afterwards. We also never got a deeper reason for that one attack during X-day protocol by that glasses dude, and who even shot him. Should have had more Leskinen and interactions with him, should have had better Moeka like in Maho's route, instead of just using her as a plot device. Should have had more Nae, or grown up waifu Nae in 2036. Should have had more Kurisu and more Amadeus. The game started out solid, and then went all over the place. Daru was bestbro, in all worldlines, in all cases. Wish I had a nigga like him for a friend.

I kinda noticed with 0 that, most of the times, attempted hijinks quickly shift into awkwardness due to somebody trigerring his PTSD yet again. I do think it starts to show itself less often as it's further into VN and he calms down somewhat, and Maho overall seems an exception to this rule.
Zero is heavy on despair with Okabe viewpoint and most of it humour actualy comes from other viewpoint segments, I think.
