Long Sci-fi space dramas dont happen often enough in anime. Gundam grew to be a staple for just that. Gundam's main message has always been about how war is bad and government can become corrupt even with good intentions in play. Mechs of course are mainly to sell gunpla/toys but more so to keep up the giant robot tradition Japan made. I understand how all Gundams seems the same and which i do agree with you on the points you've made, but majority of the time they are interesting to watch either for the mechs or the drama.
I recommend reading Crossbone Gundam if you want a change of pace.

Giant robots are cool. Gundam for me has also been one of the more if not most sincere war-story/centric franchises, and I really appreciate it. Doesn't really apply to Gundams of recent years though...

Cause mecha is awesome.

Also I'm a huge sucker for war dramas and the non-UC settings are all different enough from each other that the situation feels fresh enough to not be straight rehashes, even though the message is always "war is bad you idiots now get along"

Because there is variation in the characters and the way the stories unfold. Gundam can be good (00, Seed, Unicorn) or bad (IBO, Reco, Turn A) thanks to said variation.

Gundam would probably be a perfect franchise if they didn't start doing 4 episode long >muh political value soliloquies in every series. LOGH did it right by mainly being about it, but in Gundam it usually just detracts from fights or anything progressing.

I havent watched most Gundam series but of the ones I have watched, when they have fun or focus more on good stories that could hold up even without gundams I generally like it more

Both G-Gundam and Build Fighter didnt take themselves to seriously so they just did what they want and were better because of it. In G's case it was just a fun little idea and Build Fighters was just a tribute to gundams as a whole(also a commercial to sell toys but who care)

As far as serious stories go 00's didn't hook me because of alot of reasons but Im liking Iron-Blooded Orphans a fair bit. Probably because 00 got really preachy at points
