Watch from the beginning in order.The order of the seasons is: 2012, stardust crusaders, stardust crusaders second season, diamond is unbreakable. Part 1 is a bit of a slog but don't skip it. It's essential to knowing the plot and it's only 9 episodes. The serries only gets progressively better after that.

Start with the DP 2012 adaptation, then continue with stardust and Diamond is Unbreakable.

Watch part 1, it's 9 episodes and sets up a lot of shit in part 2 and 3, so you need to watch it. Some people say you can skip parts. They are liars

There's also an OVA series. This is on part 3, meaning watching the DP version lets you skip it. However, if you watched all of DP, read the manga (because why wouldn't you), and want more JJBA, then I'd recommend checking it out.
