Cowboy Bebop is not hated by anyone except a very small and vocal minority. It's so universally liked that people don't talk about it unless they want to be hipster contrarians like you said.

the only reason /a/ would hate Captain Tylor is because of that blueballing OVA. It was all so boring until the last one that finally goes back to Tylor, but then it ends on a fucking cliffhanger with no season 2.

Other than that, maybe the boring silly parts like the ghost ship or the dumb twins becoming genius pilots somehow. The choreography in ke moments like the "battles" and the finale absolutely makes up for it though.
