Honestly, none of the traumatized people that I know (and I know plenty) ever behave completely normally; their behavior just becomes more moderated. People that fly into psychotic rages are still prone to some level of uncontroller anger even after mellowing, surly and moody people can quickly regress to their former ways when under stress even if they become brighter overall. There's a few things that lend credibility to Sakura being so heavily traumatized (the line about her never smiling with anyone except Shirou is a really important one that adds a lot), but Sakura's characterization could definitely use some polishing.
