I don't use Instagram, but the landscape photo thing is from this summer (late summer, even), and the anime itself is from the autumn.

I think it's less of a case of anime in general doing it, and 2 shows doing it this season.
O;9 does it because it has super high production values and attention to detail in all aspects of its design (pic related is an animation cut from episode 6 that lasts less than a second, yet is 4 frames long and has immeanse lighting and shading detail in each frame).
Yuri on Ice does it because its entire aesthetic is based around being hyper modern and portraying a post-millennium world where technology and people intermingle. Just look at its ED, what would be a standard "sequence pictures giving an idea of what each character is like" affair that tons of anime use, but it distinctly makes this sequence of pictures look like a scroll feed on social media, showing how we use IT to keep a record of the emotions and connections we feel throughout our lives.
