NPCs drop money and generate money into the economy.
NPCs sell you shit and remove money from the economy.

And with the rate of progression in SAO, they wouldn't have enough of an influx of money into the economy in a way that the players would actually start spending it in vast amounts.

They also go and sightsee the new towns whenever a floor is cleared.

And food and basic services. If you were a low-level nub who didn't care about min-max'ing, NPC services would probably be more than sufficient. (The Apple Guy was clearly not grinding apples daily to save up enough for an awesome weapon or anything.) And if you're happy getting cheap goods from NPCs, that keeps player merchant prices down. Obviously, it'd be different for the Clearers and high-level crafters who would have a much higher revenue stream coming in, but they also have high expenses to balance it out.

I'd hazard to guess that there's just different portions of the player economy to serve different levels/types of players.
