I can't remember if they even said when the work on 'The Great Passage' started, but Fujioka had worked there for 5 years until Majime arrived, and about a year later, so that's 6 years. In 2nd episode had this 240x320 flip phone. So I'm guessing the timeskip was between 6 to 7 years.

My field is a bit different, but I can say that AFAIK the show is pretty accurate; the only big difference is that in modern (at last in the last cuple of decades) dictionary making they use informatic instruments and corpora a lot, especially in choosing which terms they want to include in the dictionary itself.
