How far into history are the novels? The last translated volume IIRC (volume 14) they were fucking around with Otomo clan in Kyushu and Matsudaira has only just been renamed to Tokugawa.

I think they're going off history at this point. Here's what I got from the summaries of Volume 15 and 16.
For Volume 15, Mitsuhide's mother was captured and she was forced to betray the Oda clan and then shot Nobuna's brother who was escaping. Meanwhile, Nobuna and the Oda-clan risk complete anhilation after being betrayed by the fucking Tanuki and is now surrounded by both the Takeda-clan and the Tokugawa-clan. In order to help Nobuna, Saru, who's still fighting in Kyushu, challenge Ryuzouji Takanobu to a decisive battle.
As for Volume 16, Saru and Nobuna's brother joined force in order to save Nobuna. Hosokawa Fujitaka join the Eastern Army under the condition that Mitsuhide marry him(?). In order to stop the war, Imagawa Yoshimoto and Date Masamune finally make their moves. Also, a missionary name Gaspal appear at Mitsuhide's side.

Since the videogame that Monkey played doesn't include conquering Korea and China, just Japan, he might not want to risk it if he ever actually gets that far.

If he and Nobuna actually want to create the Greater East Asian Co Prosperity Sphere a few hundred years early, his best bet is probably to get some cannons on his ships that can actually shoot worth a damn so the Korean and Chinese ships can't cheese them by sniping from outside of boarding party range, or sending turtle ships that can't be boarded.

If he really wanted to he could just tell them future concepts and technologies, but he has been very reluctant to do so for the most part. Though the plot also hand waves the excuse that he isn't that smart as well, which is a cheap cop out since just giving out ideas of what things are like could easily help.
