I believe that the difference between a drifter and an end is the reason they were near death. The drifters either died in battle, or were betrayed, but they would have died a "regular" death. The ends, on the other hand, had more "epic" deaths. Joan was betrayed by the very people that she was protecting, Anastasia was asssassinated, etc.... Another possible difference could be the timing of the summoning. Ends would be summoned immediately after death, while drifters immediately before. That could explain the difference in behaivior.

Historically, Joan was captured because French reinforcements did not arrive due to French men who did not like her rising status persuading the king.

Then she gets captured and burned at the stake.

So in addition to being betrayed by those she was willing to sacrifice everything for, she gets burned alive which is the worst way to die as its constant agony (also its not the fire that kills the person, its the smoke). That sort of thing could turn anyone psycho.
