They did work, but their innate talents gave them a headstart way ahead of Souma by just getting the perfect ingredient on the fly every time, so they had more time to experiment and perfect the dish, while Souma was still having problems in finding a good fish.

That's usually how talent and speciality is passed in this manga, it puts you way ahead while other without it have to work their ass off just to get where you started.

This arc we already had exemples of this, of Souma having literally no idea what to do with bear meat, having to consult Kuga and a hunter, while later they invade Hayama's kitchen only to see that the nigger had already worked around the meat's smell.

In Dog's case that wasn't innate talent that helped him pick good fish to use, it was experience. Souma also relies a lot on his experience gained by working at his dad's restaurant, but I doubt anyone would claim all his victories so far have less merit because of it.
I think it's fair to shit on Hayama and Erina since they do have an unfair advantage (Giganigga might as well), but everybody else is there because they bust their asses off.
