At least think a little about what you are actually asking, anon. What you read and what you find written are so incredibly varied that such a question cannot be answered in a reasonable manner.
In a couple of years you will be still looking up words, regardless of how much you set to "learn" everday. Find a number of new words you are comfortable with and stick with it. Look up words when you need to and add them to your words you are studying X amount of every day.

Then stop thinking about it altogether and just do it.

My level 2 class has been cancelled, should I just finish the text book and pick up another text book ? I found it very difficult learning a nipp on my own since I couldn't talk to a teacher about it if I had a problem.

'understanding most of what you read' is pretty vague and honestly speaking, even understanding 90% of every word in a sentence is a bad place to be when you consider that you'll be stopping every 10 words to pull out a dictionary. I wouldn't consider anything below 99% to be comfortable now that I've come this far.

I didn't feel I was reading comfortably until I had around 8,000 words, but even then what really changed the experience from being bothersome to comfy wasn't so much the number of words, but how intimate I was with the words and the grammar involved in a text. When I was understanding every word in a sentence but needed a five+ seconds to remember the meaning of some words it's a lot more annoying than being able to instantly parse a text and detect which nouns/verbs are beyond my understanding, but at the very least know how they work/affect the sentence.

Just do tae Kim to get your feet wet and then go into nihongo challenge. Start with n5 and put all words you don't know into anki. Make sure your deck has sentences that include the word you don't know. Study your anki deck every day.

Do the vocab, grammar, and kanji books all the way up to n1. Try to do a lesson a day in each. Or alternate one every day (vocab and grammar can be the same day).

Core 2k is a meme and genki is slow. It'll probably take you a year to a couple years to get to n3 (depending on how slow you take it) at which point you will probably be able to read most shounen manga without trouble. You'll be about as good as a 11 year old at n3.
