I know it is, but it's just overused to shit.

So they don't have to design a character.
It can also be used to help show that the character in question doesn't really remember the parent that well anymore.

Yes, I really liked how it was used in this case. This makes you suspicious of Hohenheim (especially if you've seen the first anime) and then it turns out in a totally different direction.

Tanabata episode usually comes right after this

I guess it's supposed to symbolize that they're gone by erasing their face. But I wonder if directors really consider it or if they learned the instinct to do it without thought.
