Who knows, the more ceremonialized versions of iaijutsu probably do have dumb shit like that, but in principle iai is just a style for quick drawing.
Putting the sword back into the scabbard may be more of an anime/game thing, like Rurouni Kenshin or Samurai Showdown. I remember there was an iai-based character in one of the SNK games, can't remember what she was called. She'd sheathe the sword after every strike. Looked cool, but probably stupid.
