While poor Araki is visibly uncomfortable at a few parts, the section where he outs DIO is actually one of the parts where he seems more at-ease, because he's able to talk about what he actually wrote as opposed to having to comment on her fantasies.

So Joseph and Jotaro both go to Egypt to kill DIO so they could save Holly, because her Stand manifestation was killing her.

Exactly how does killing DIO stop ONLY Holly's Stand manifestation and not Jotaro and Joseph's? DIO's body had already been incinerated yet here we are and Jotaro still has Star Platinum, which is the most directly linked to DIO via Jonathan's body. Joseph's Hermit Purple also doesn't go away.

Because stands are for people with fighting spirit. Holly doesn't have such spirit and couldn't handle a stand being directly passed down to her all of a sudden, while Jotaro and Joseph could because they have the fighting spirit. After the deed is done, her stand went away because she never had the spirit in the first place, Jotaro and Joseph's stands stayed because they have the power to control theirs. Fighting spirit is also how the arrow chooses people, to have fighting spirit is to be strong-willed.
