I don't have one favorite composer, but undoubtedly Yoko Kanno is probably the best composer out there. She does have many inspirations from other songs, but all her anime soundtracks carry so much feeling.
Also among my favorites are Susumu Hirasawa and Shiro Sagisu. Akira Senju, Michiru Oshima, Yoshihisa Hirano, Yugo Kanno, and Taku Iwasaki are up there too. I do listen to Tatsuya Kato and Sawano at times, but they don't have any variety whatsoever anymore. It's really too bad that Sawano's making so much music now (Kabaneri and Thunderderbolt Fantasy recently, and upcoming Blue Exorcist, Attack on Titan, Nanatsu no Taizai sequels) while Kanno's last anime work was in 2014 and there's no mention of her returning yet.
My favorite works would be Hirasawa's Berserk themes, Sagisu's Berserk movies soundtracks (yes I'm a Berserkfag) and Evangelion 3.0 soundtrack, Yoko Kanno's Turn A Gundam and Zankyou no Terror soundtracks, and Akira Senju's Red Garden soundtrack (which is hard to find now but is one of the most beautiful anime soundtracks out there).

It's funny how people always mention Forces when talking about the Berserk OST when that song wasn't used for anything except episode previews. GUTS is a much better example to use.

Dunno. Azumanga Daioh's soundtrack, probably. It isn't anything special but it has that warm and fuzzy feeling to it that I enjoy.
