Why was the 90s such an amazing decade for anime?

The 00's were.

It seemed like an era where animation was viewed as and utilized more as a medium with a brighter future instead of today's "get enough out of the otaku/fanbase this season and that's good enough until the next one" entrenched status quo where the future looks like more of the same

Think harder, there are several masterpiece tier anime like Mononoke, Mushishi, Gankutsuou, Princess Tutu, Haibane Renmei, Planetes. Plus a load of fun and memorable series, so many that it would be pointless to even try and list them. Early 00's is when anime had its second boom of popularity in the US. Shows like Gundam Wing, Dragonball Z, Pokemon, etc. helped bring in more shows. Companies where regularly licensing anime, more manga was being brought over faithfully, etc. It was basically the gateway era for millennials.

I wouldn't say the 90's but just the past two decades in general were an amazing time for anime. They laid the groundwork for anime to be what it is today, but it isn't surprising that a monetizable medium like anime has become as stagnant as it has, it was inevitable. Hopefully there can be more studios that try to make more unique breakout works.

I don't see why people feel the need to ironize depth and symbolism. Some works just have more of it and that's it.

It's just the styles. These days anime all looks the same with minor variances so slight it doesn't even matter. And if there is a break out style that looks unique, it's too different (Mob Psycho) and a turn off. The past decades at least gave us a mixed bag of style so that we could pick and choose new things we didn't know we wanted.
