Do realize that the flashback is presented like a tale, and they didn't go into full detail about what happened in their past. He didn't just say that to her, there was much more going on between then.

For example Theresia never wanted to wield a sword for fighting but thanks to her blessing of the sword saint she was extremely good with it, so she felt compelled to use it again after she learned WIlhelm's reason for wielding it, in the sense that he used to protect.

It is only one way of perspective to find out. Just like with any manga, novel and anime. You can already get the part where Wilhelm met Thearesia, village destroyed, ends up getting saved, plans on returning the answer of the sword. The extra volume is regarding the events of the Beastmen War. It tells in detail some of the history. That's it. Wilhelm and Thearesia technically ended the war. The rest of the events follow afterwards somewhere later in the future source material. They get married, have a kid, that kid has a kid who is Reinhardt. The only actual hero in the story. Wilhelm is considered the other main protagonist besides Subaru. That's it. He is also considered to have a huge relevance in Subaru's life of who he wants to be like.
