You can't have an antagonist who actively tries to wipe out the entire cast every single day and then just spend several years resolving it.
my guess is after some point, Souma or his Dad completely breaks Azami and he runs away, eventually coming back a reformed man and making amends with his daughter.
Then a new challenge/adversary is introduced in the 2nd or 3rd year.

Pretty much, I got into it through some anime-only friends and I can't imagine how they won't drop it like a fucking rock when Azami shows up (even if some cool stuff did come out of it)
If it does get better quick, there are a lot of clever adaptation tricks they could do that would make the anime far superior to the source material for this arc, but you do really need that "it gets better, trust us" hook.
Sket Dance was also a gag manga and was never at the top of the ranks. Gag series have a lot more repetitive value than most genres unless you are up against the likes of Detective Conan.
Given how the Elite 10 sided with Central and the battles are already beginning, there's nothing to really write on for 2nd/3rd year. You might try using common sense but that doesn't work with the manga industry. They for whatever reason, deemed that a shonen series about a kid who climbs to the top in 1st year, will not be interesting if he has to defend his position in the 2nd/3rd year. It's always gotta be a underdog thing. There can only be progression, there can never be maintaining the status quo. That's shonen 101.
By the time Souma finishes off Azami, even if there are E10 still left, it won't be enough to take a whole year or two. This is especially true given how the only 2nd year with any remote threatening presence is chicken man and he already lost while Kuga is a non factor. All the big shots are among the 3rd years.
It's not about whether or not it can be milked, cause Tosh alone makes it milkable. There's a thousand ways to milk it if you're willing to take risks with the story direction like having Souma turn into the 'bad guy' through his tyrannical experimental dishes in the second year and basically have it be really lighthearted with the new 1st years rebelling against Souma's ridiculous whims on the E10 council.

They did kind of blow their load on Azami and there's really no turning back there at this point, it'd be a huge de-escalation and it'd feel like the weirdest intermission in the world just ended.
The series probably wasn't one that could've run through all 3 years anyways, though, unless the 3rd year was a fair bit shorter or less battle focused and more on character interaction (because at that point most of the battles would be retreads of first year). The third years in the current arc are scary and all, but wait 4 months and it's oh hey they're gone I guess things just got much easier.

Of all the possible endings, none of them work in the first year. You pretty much have to make it to end of year 2 before you can even do an ending where he leaves the school with Erina like his dad.

I don't deny that, I'm just explaining how as a magazine marketed towards kids, it's very hard for WSJ to maintain a series about a character who beats down others. Even for maintaining status quo, which WSJ series do you know has a rival of the MC that stays an equal rival or weaker (so no fucking Sasuke who is always conveniently more powerful besides a handful of times) that ends up not being fodder? It's like saying Takumi Aldini will graduate as the #1 of Souma's grade or even be Souma's final opponent in the battle over the first seat in 3rd year.

The epilogue might have them time skip to 2nd or 3rd year sure, but the main meat of it will be 1st year and anything in the 2nd/3rd will basically be an afterthought. Beating Azami in 1st year means they are the top of the ladder, there's nothing interesting to go on during second year.

Probably because he still wants to expel them instead of making a deal when he's under the impression that Erina would go back to him should her order her to.
I think he'll force her to go up against Megumi or Soma as part of the E10 right now by threatening to just expel them for collusion with a proctor otherwise, she'll absolutely crush them and even though something will come up that'll save them, she'll go into shock from almost getting a friend expelled, realize her rank ties her to him and there's no chance he'll let that go, and try to put some distance between herself and the group.
Even though on the surface everything is good with her mental state, there's probably a shitload of leftover programming and he'll exploit the shit out of that when the time comes.

The only explanation would be that Aizen is trying to make the rebels stronger and he was fucking with them the whole time. That is literally the only thing that would make the most sense as to why Aizen doesn't just expel the rebels or tell them to fail them without question.
The thing about this manga is, we don't need a villain. This manga was perfectly fine not having any form of villain, but challenges to overcome and a show of the character's skills.
Now with this villain it just looks fucking stupid. Surviving through the school's challenges already put in place was enough. Having cooking battles and chefs displaying their skill in cooking was enough. Having a big bad for no reason other than reasons is just shit.
Another problem is that Soma is becoming John Cena. He's still pushed as the underdog despite him beating a fucking Elite 10 member.
This manga would be so much better if it were what it was originally; people battling each other to simply get better/weed out shitty cooks. They can still have Soma and the crew going through challenges, but them having to go through these stupid set of biased challenges is just no fun. Especially when the win due to absolute bullshit with no explanation.
It kinda is shit when whenever Soma loses, it's just 'oh well, I lost, time to learn and get better!' But then there's hardly any consequences for anyone he's beaten. Gigga Nigga just gave up a bunch of knives and learned and became good. Nikumi became tsundere and went to the Don RS, which isn't really a big deal. Everyone he beat in the Autumn election simply lost and moved on. And Eizan just lost and didn't destroy a building.
If i am not mistaken, didn't Tsukuda and Tosh got an new editor around Azami debut? Also, Erina was still a smug bitch during that time. So they had to introduce him to justify Erina attitude and at the same time open up a new plot (Rebels vs Central). Albeit it is shitty as fuck now, since there is no tension and stake now.
There's definitely a stake in that if they lose they all get expelled and Erina winds up Bad Dad's taste tester puppet for the rest of her life, but they've done a horrible job with the tension, yeah

If, for whatever reason, Soma was to be in the E10, then it would make no sense to have him go agains Erina. It would be better for him to go against the rebels; that way he could lose and have everyone he's going to go agains win, thus not having to be expelled. Or he could win and be the one to have his friends be expelled.
What makes you think she's not going to face them right now? Azami's not going to put his daughter in a position where she's going to get expelled and all signs point to him really wanting to get rid of Souma, who she's currently sharing a train car with.

Yeah, Erina didn't take part in the elections since their purpose is basically to sort out the likeliest first years to become part of the E10 come second year. Since she's already part of the E10, it's pointless and instead she served as one of the organizers of the election.
She still took part in the Hell Camp, in Stagiaire, and even for the Leaf Viewing she sat on the side of the first years and not the E10 side. The moon festival was for all grades, and granted Erina was in the zone that was basically just 3rd years + the E10 second years, but that's more about her skill and savvy than her position.
Azami's made it pretty clear he's not abiding by the old rules, and even if she sat out the one stage of the exam as a proctor there'd be 4 others (or he could just lie and say she passed this one with ease)
