I feel like I'm in the same boat. I don't think I've ever been obsessed to this point with an anime before. I've never bought this much anime merchandise before either. A couple things here and there for a series I liked, but this anime. Jesus Christ. I wanna buy just about everything that comes out. The initial leaks about the titles and release dates had a few other things different about them.
The KaraTodoTotoko one was originally just to be KaraTodo and released much earlier, but it got pushed back and reworked to include Aya Endo as Totoko.
The Girlymatsus and snack shop were probably an early idea for the CD that got scrapped by the writer, or that writer left the project and another CD idea got put in the final place. None of the CDs are written by Matsubara, but other anime screenwriters.

I'd consider a more slow and steady approach to power through the rough stages. Building up your AP speed, then making a wall of Karas and Ichis is a solid strategy. Then reinforce them with faster units once they've made some distance.

What I do there is build up an Osokara wall to protect a bunch of Ichimatsus and level up the AP. Then, when they die, send out Jyushimatsu and Choromatsu as barriers, to stop Ichis and Tottys from dying.

Try to get everyone's level over ten.

So the common recommendation seems to be Oso/Kara+Ichi early, Choro/Jyushi mid, Ichi/Todo late. I kept using the gold Totoko, but should I switch entirely to Matsus only? Are units necessarily better because of higher rarity?

The furthest progress I made in level 86 was sending 1 to 4-star Oso walls in front of the long-rangers. Generally I seem to be having trouble whenever Iyami or his equivalent enter the field.

I like Totty a lot myself, but he's only useful when you have a good swarm of him. My favourite strategy is to, once I've got enough Karas and Ichis to hold back the enemy, switch to Totty and either Choro or Jyushi, whoever you prefer. Totty's cooldown is so long that until you've got four or five of him, he doesn't do a lot of good. Once they're set up, though, he's a powerhouse.

What level/rarity would be sufficient for them not to die in one hit? Also, the Karas that I have so far are pretty cringe-worthy so I'm wary of leveling any of them. Hoping for the employment ver. of Karamatsu. I'm literally this close to start buying diamonds.

It's hard to say what level or version of Kara is best for where you're at, but it might be worth levelling a silver version up to five or ten at least, for the meantime.

My late-game team has two Tottys and two Juicys so that, once my AP speed is high (or maxed), I can spam them as quickly as possible, but it might take some experimenting. That team is just about the most expensive you can get, without using secondary characters.

I know many people here prefer Choro over Jyushi, but I find the latters speed and toughness to be worth the cost.

That made me think of something.

What if Osomatsu give them all some type of medicine that made them all younger? The catch is that the medicine worked, but they all keep their San personalities.

And they all fight for Osomatsu's attention. They end up being so clingy and annoying that he tells them off and they leave.

Oso goes off to look to look for them and finds outs that they had gotten themselves in trouble. He saves them, and scolds them. But he realizes that he fucked up, and he apologizes.

He tries to get them into their bed, and when he comes back, the medicine fully worn off and they were back to their normal selves.

In the end, they don't remember it happening, or at least they pretend that they don't remember for Osomatsu's sake. And they have a little bit more respect for him as an older brother Even though he's still a fucking idiot.
