Not only that, but overexposure and lack of development will easily lead to one getting tired of the character. That's why I like manga/anime that sometimes switch over so that not everything is based around the MC and what he/she experiences.

This is only ever true of shounen shows. Shows with a slightly older demographic, such as Hibike which this thread began with, tend to write their lead more interesting than those surrounding them, if only to better retain the audiences' interest in domestic and mechanically uninteresting narratives. Something like Hunter x Hunter is interesting for the sceptical and battles, visceral and blunt combat, straightforward combat that isn't necessarily bad but doesn't demand much of its audience, and in turn is easiest to digest with a protagonist that is easy to project upon. Hibike doesn't offer any of this action, rather characters and relationship conflicts, something that requires a strong central lead. The main reason why anyone would prefer a character besides Kumiko is either because they particularly do not like her design or the way she is written, or fetishize another side character (see the OP). This is partially the reason why a Evangelion is so lauded, because it suggests an appeal towards the shounen audience while actually focusing far more on the domestic conflicts. It's also the reason why people often complain about how wimpy Shinji is, because it's only ever the shounen audience that self-interest, everyone else is mature enough to read Shinji as the complex character that he is.
