What's up /a/tards I'm a professional cook. I went to culinary school, have worked in the restaurant industry in SoCal for near on a decade now. Mostly fancy gastropub-type shit, a brief stint in white-tablecloth, and some institutional and fast-service when I was just starting out.

I really like Sweetness and Lightning because the core of the story is about using cooking as a means to communicate your affection towards the people you care about, and that's what got me into cooking in the first place.

Kohei is holding the knife wrong pretty much every time, though. This triggers me.

It depends on who you ask. Cooking has a LOT of variables that are difficult to isolate, so people tend to manage it more on "feel." Backing is highly procedural and precise. If you follow the process correctly, you achieve the intended result (bread, or whatever). This is fine, but when it fucks up, you don't necessarily know why or what part of the procedure you fucked up on. That can be really frustrating.

I've known more than a few professional cooks and even chefs who cannot into baking, and find the higher-level stuff intimidating. Likewise I've known professional bakers and pastry chefs who don't really go beyond the basics as far as cookery goes.

You have to have a tremendous amount of knowledge and experience to be able to understand the ingredients and the processes at work in either baking or cooking. Doing it all is out of a lot of people's range, so they tend to specify in one or the other. Generally cooks/chefs tend to be more improvisational, and bakers/patissiers tend to come at it with more of an engineer's mindset.
