e.g. Humans can't use magic naturally and have to form contracts with demons who slowly corrupt them over time as more magic is used.

Magic is always finnigy power, because most of the times characters pull magic spells out of their ass and they rarely are made with real "rules" because they are magic. (don't have to explain that shit.) Also if you try to explain it, sometimes I can't follow the rules, the rules bend too much or it goes too much to science.

On the other hand physical fights are rather simple to understand but they also bend rules time to time.

Thats is why I actually like magic in Berserk, its either been really simple spells or summoning with elements as aspects, and has been mostly used as support.

Yes, but it would be very easy for it to lose focus with the mages skills becoming more and more advance and various. Even if he's kept strictly as a battle mage, sooner or later he'll be just doing huge explosions. Maybe if the setting is actually low magic and all there is in battle magic is punching people at a distance, launching a shard of ice or a small fireball. And most importantly, these skills do NOT become stronger with time/age/experience, you learn it, you can do it, that's it.
