If Ymir was eaten by some shifter then there's nothing of her left anymore, I think that in the letter there's Ymir hair ornament she got from Historia and as such stories go Historia will wear it from now in a ponytail fashion.

For me the letter means Ymir is dead, sadly killed off-screen which we will get a flashback when Hanji will be reading the letter.

But seeing what Isayama did to make Reiner and also Armin and even Erwin survive I would not be surprised if Ymir would hide her brain in some shifter body and will take over that by herself in some time to go back to her old form.

I'm not sure if this is true but I just finished reading a book about the allied strategic bombing campaign against Germany in WW2. Anyways, there was an 8th Air Force airman who after being flung out his B-17 without a parachute survived a roughly 25,000 foot drop when he hit the glass ceiling of a train station in the French city of St. Naziare. I'm pretty sure he had severe injuries but the glass broke his fall and he survived.
