You are right.

You are wrong (partially). Most shows from back then have been almost completely forgotten, only a handful remain memorable.

You are right, however, in that the rate of memorable anime/trash was better back then, because less shows were made. Nowadays we still get memorable shows with about the same frequency as before, but we perceive them as less because more low-tier shows with poor long-time life expectancy are produced.

The novelty gradually subsiding and the rise of internet distribution gradually culled that and forced the industry to rely more and more on securing well-funded adaptation contracts from other media.

Whatever woes the anime industry is facing right now is more of a consequence of the fact that originals are almost impossible to market and are functionally more or less just arthouse and portfolio pieces used to make themselves seem like a more attractive bidder to manga and LN publishers with adaptation contracts up for grabs. As a result, the quality of the average anime is a reflection of the quality of the average manga and LN, and both the manga and LN industries have been shittier than usual lately as nothing outside of the very narrow niche of magical battle action, magical battle harem, isekai battle harem and the occasional mellow SoLcomedy with almost no comedy gets any real promotion effort on the part of their publishers. Everything that gets popular gets disposed of 8 months later as publishers are only willing to cash in on short-term success while they continue looking for some lucky break to become the next big 3. There's seemingly no in-between, or at least not enough of an investment in the in-between for them to be getting adaptations.

The growth of legal online streaming services in japan (eg. netflix and its ilk) might change things up since it constitutes a huge oppourtunity for an alternative income stream and a means of promoting and distributing work without being held hostage by source material and publishers, but I seriously doubt that the owners of those distribution platforms will ever let content creators have enough of a cut of the profits for it to truly match the golden age of VHS.
