The moral of the story was that for as much a piece of shit Van comes off as, he was still fundamentally a good person.
Meanwhile for all the gentleness, kindness and compassion Koo Krying Kroo offered to people, he was still fundamentally a horrible piece of shit.
Van's motives were purely selfish, Koo's were purely altruistic. That still didn't change who they were as people. It's part of the theme why Rey ends up dying while Van doesn't, because Rey despite being a kind person, still crosses the line he can't come back from and it leads to his own self destruction literally and figuratively.
It's not Van getting revenge that I like, it's that the story itself is presented that Van isn't a bad person for getting his revenge. He kills Koo in the way a good man kills someone. No talking, no gloating, no attempts to justify his actions. He cuts the guys head off and leaves.

Ginko just travels and reacts to what he encounters, be it Mushi or people. That's the essence of slice of life. Still I'd argue that the majority of the episodes have Ginko act as a plot device. He just sort of shows up and solves whatever problem that there is, and the rest is about the characters of the week and how they resolve their problems. Or maybe he doesn't act like that, it's been a while since I've watched it. I guess it's time for a rewatch.

There aren't any other recurring characters true, but there are the character of the weeks that have their own problems that they need to solve. The only point I'm trying to make here is that it's not always about Ginko. There are quite a few episodes where Ginko's only role is to explain the mushi inflicting the person and giving medicine and leaving, and the rest of the episode is more or less dedicated to the character of the week.
Like I said before I haven't watched Mushishi in a while so I might just be cherry picking episodes and my mind. To be honest the longer I talk about this the more I'm doubting what I'm saying so I'm probably just going to rewatch it.

These two points are completely at odds with each other. First you say Ginko is just a framing device, then you admit he's not a framing device but an actual character with agency. Which is it? A framing device doesn't have agency, they are a window for the audience into the story.
I also think you're mischaracterizing Golgo with this too. He's not passive either, he has a role in the story besides just being a voyeur. But his role is power fantasy for the audience, his story is about thrills and action, getting people excited and interested in what will happen next.
Mushishi is about experiencing the setting, the wonder of the Mushi, the weird, fantastical and sometimes frightening things that Ginko encounters, and how he responds to them.
What you're noting is that Golgo is rather one dimensional as a character, but that's fine because there's a lot of other stuff besides Golgo to hold your attention in his manga. Mushishi on the other hand just has the Mushi and the random people you just met, the only real constant is Ginko himself, so he has to have a lot more facets to him and a lot more direct agency to make him interesting.

Plot can have different meanings. The broadest definition is "what happens in a story," which you could apply to the episodes/chapters of Mushishi. The more specific definition used when talking about writing refers to a series of events within a narrative, not everything that happens, but the "main thrust" of the story, what its actually "about" so to speak.
