Think of King Crimson as The Hand, but for time. He erases time, and the time and all the events in it merge back together to fill the void. Time stop and everything in time stop would still happen. Diavolo can only predict what will happen and select the best result. If DIO really wants to stop time and kill Diavolo, all Diavolo will see is him dying in every single prediction because time stop is still time stop, erased or not.

I think it's more like the Wall Eyes or the soil caused the fruits produced there to behave funny, allowing someone who eats the fruit to sacrifice someone else to cure their wounds (vampire reference?), and so Josephmi fed Kira's corpse the fruit and he sacrificed himself in an attempt to bring him back to life, and this might've worked but the seismic activity at the time caused them both to be buried together, and things buried in that soil get pieces of them swapped.

So Gappy is Kira, kept alive by Josephmi's sacrifice, various body parts and Stand.

This is probably why Dio would lose. The first time he stops time, he'd likely go for a gut punch or a neck chop and lose his arm in the process. Based on the magnet trick and Dio being wary of the Hamon wrapped around Joseph's body, I'd argue that chemical reactions and such still happen during a time stop, as long as it's touching Dio's body, so if he tried to punch Kars his hand would melt from the digestive acids covering Kars' body. Then when the time stop expired he'd be a sitting duck.

You can earn a Stand the old-fashioned way, too. And being resorted to just monks or warriors as the protagonists and vampires as the antagonists makes the narrative far too narrow and the powers too limited by giving everyone who isn't a vampire the exact same powers. Every enemy gets the same weaknesses, too, and then you'd have a lot of vampires copying each other's techniques like Straits did with Space Ripper Stingy Eyes, which gets old really fast. It'll quickly devolve into DBZ while Araki wears Ripple's potential for diversity thin. Look at Caesar and how his bubbles very closely resemble a Stand power. Same with the Pillar Men's Modes. There's not much you could do with it that wasn't already done before, and copying other people's power sets instead of giving them their own is Ki Energy garbage. Ripple is not like Nen or a Devil Fruit, and thus it could not be expanded upon. Did it need to go away completely? No. But was it a good idea to drop it in the first place? Absolutely. Araki wanted to do some crazy shit but he made the Ripple too versatile in its capabilities but too limited in its variety, and a change was needed for the direction he wanted to take JoJo.

The rock men have only been trying to kill the people who fucked them over, I mean Damo only threatened to kill the Higishikata's because he wants to find whoever's been killing his fucking associates.

The rock men aren't really evil. Yet, I am pretty sure there'll be something more to it later on.

I wonder how the Bite the Dust time jumps will be. The first few are from Hayato's perspective so it's just straight cuts. With DP making some interesting transitions so far I hope there's something creative there.

Valentine wasn't really evil either but he made enemies of the main cast that fought back. Similarly Gappy has no memories so he's just defending from these people that are trying to kill him for some reason.

I hope Araki continues with the non-pure evil antagonists. It's a nice turnaround from what the early villains were.

They're antagonists sure, but that doesn't necessarily make them villains. They've all been assholes so far (even Aishou), but they have reasons to. Villain and antagonist aren't quite the same thing. If Angelo had been the MC of Part 4 then he'd quite obviously be a villain, but he'd also be the protagonist since the story follows him. And Josuke would be the antagonist despite there being nothing villainous about him.

The Rock Humans are pretty grey so far, they're antagonists but whether you can call them villainous or not remains to be seen.

I like the charm. It had the benefit of evolving from the more generic earlier parts to the more interesting later ones, with lots of ridiculousness and different styles.

But I still overall like the stories set in the new universe more.

That said, DIO could still possibly win. The World is an extremely physically strong Stand and KC being as strong as Star Platinum and thus able to crack The World is something I'd doubt. The only way to kill DIO without destroying his stand would be exposing him to sunlight. Which could make KC's time erase ability a versatile option.
Now I really want a DIO vs. Diavolo fight
