Then no fucking wonder you hate Shirou. DEEN's FSN is a terrible adaptation that adapts the weakest route in the VN, the Fate route, while also needlessly adding elements of the other two routes. Additionally, Shirou's "hurr grills can't fite" attitude is only in the Fate route, and is much less pronounced in the VN, while at the same time giving good reasons for why he thinks that way.
Put simply, you got easily the worst possible introduction to Fate/Stay Night. Play the VN if you want the full experience, or if you don't have the time for it, watch UBW and wait for the Heaven's Feel movies, then watch Fate/Zero.
That's like the worst thing Deen has done that I can think of.
He's not even that bad in Fate either, when you read the other routes a lot of his behavior makes WAY more sense in retrospect and is way more interesting, you'll be reading the other ones come to certain parts, think "Hey, wait a little" and start adding the pieces together.

He's kind of an airhead, and does indeed get his shit kicked all the time, I wouldn't say he's a Gary Stu at all. Whenever he does triumph in battle it's because of the help of someone else, or something very circumstancial

It is a Gary Stu trait if he gets special treatment from the narrstive and absorb importance from other characters. His "flaws" become a excuse to bring more attention to him and glorify his actions. Saber being expectator to his fight with Archer was Gary Stu-ish as fuck.
Maybe I should watch more shows but his beta level feels extremely first-world problems tier. Shinji and Yukiteru I can mildly understand their issues.
