the series is ending at the end of volume 2; so starting in volume 3 should be ok. However, there has been chapter/content skipped in the anime, which is why people suggest reading from the beginning.

up to you, i don't think you'll have a problem after last ep starting from volume 3; of course Vanir shows up in volume 3, and he's tied in with some of the skipped content in volume 2 (primarily the dungeon crawl)

The anime cuts off one of the best chapters from the novels.
Definitely recommend starting from Vol 1 to read what it's cut off and the monologues fill in some plot holes in the anime.
Anime will end at Vol 2 so Vol 3 is where you pick it up afterwards.
