The brain can't fully understand the objective world so it takes a lot of shortcuts, which is why science requires an extremely careful and methodical procedure to say anything is actually true (and even so truth changes with time). The idea that she justifies a reality of her mother being still alive after not eating several weeks or months by distorting facts seems odd to me. She is certainly depressed, somehow insane and really angry at her family situation but if she can think up plans to solve her situation, teaching Araragi mathematics, then she cant be delusional to that extent.
Also when a human dies his body deteriorates but the skeleton will be there for several years. How can she see a skeleton and think her mother is still alive?
