It's the Toriko/One Piece drawing style. There's probably a proper terminology for it somewhere, but it's a stylistic choice of the artist rather than just the guy being inconsistent, though he is still inconsistent at times when he doesn't want to be.

After the time-skip it can basically be considered a different story altogether. Thorfinn has no character development whatsoever, for the first part he's one character and when the other starts he's a completely new character. Or rather, a non-character, who is quickly (read: slowly as fuck) turned into yet another character during a one-sided uninteresting drawn-out arc about the wonders of working hard and not killing anyone who looks at your wrong. It's a shame the decided to use Thorfinn as the MC for the second part, in a way, because he was never interesting and still isn't interesting, but as a vital side character he filled an important role. I would much have preferred to see him less traumatized, still angry and prone to violent, but slowly coming to terms with his life as he learns to hold back and the consequences of his violent behavior. There was much potential for good character development there, but it wasn't realized, and as a MC he's got very little to offer.

Vagabond is the perfect example of the kind of development Thorfinn needed. Maybe not as drawn out, but Musashi starts out as a violent brute who kills for little reason with no thought about the suffering he leaves behind. Then he develops, step by step, going through different stages. Thorfinn was edgy murderbrat with zero character development, bam, now he's a blank slate, bam, now he's Viking Jesus. His development was neglected for the entire prologue, and then the characterization he had during it was scrapped, and then he's another character. What I most of all don't understand about it is why. There were so many ways of giving him have a more gradual development. He could have lived with his family, he could have talked to his mother about his father (who also went from killer to pacifist), he could have gotten into conflict with others on the island and been forced to confront the results of his violence in a situation where he couldn't use MUH VENGEANCE as an excuse for not thinking about it. But nothing of the sort happened. It was rushed and I don't see why. Maybe because Askeladd was gone and the author couldn't figure out who else to take the spotlight until Thorfinn was ready to take the main stage in or during the expedition.
And why are you assuming this is pasta or trolling or anything like that? It's my honest opinion and it's not based on nothing.

In this case, both of the series started with a badass MC who at one point settles down to do some farming to initiate character development. This isn't exactly common, so it's directly compared to one another. Why do people do it? Because that's how humans fucking work.
