Because that's not what Macross is about.
The war is a stage for the main characters to interact on.
There's no space for moral ambiguity, complex antagonists and all that, because the characters
all fill those roles.
You could set any Macross series nearly anywhere if you ignore the other foundation of the series, which is transforming fighter planes.

I love a lot of older mecha anime but at this point I kind of don't know why they keep doing them because outside of the odd OVA or Movie like Gundam Unicorn or Origin they do not sell at all anymore really and a lot of the worst shows coming out lately are mecha anime. I think it's significantly harder to see their changes. When it comes to Gundam, each one has like a different face or at least have a unique function that helps make it easy to tell them apart. But when it comes to Macross, they all do the same general 3-step transformation and all go pew-pew-pew. Only the ace customs look really different and even then the biggest change is that they each shoot more lasers or carry more missiles (or in Basara's case have a face, now that's the kind of difference I'm talking about)

I'm saying this because I'm seeing people talk about them in this series as some sort of downgrade as like they all don't do the same thing anyway

When the first Macross came out there weren't a whole lot of real robot shows. Heck Macross INSPIRED shit like Mech Warrior in the West, it's one of the fathers of the fucking genre if anything.

And the difference is unlike Gundam it can't write off the stupidity as easily so now they have to incorporate it into the canon.

It's not dumb because it works. Even if it doesn't work for you, it works for the majority of people. Yes, there is no real-world benefit to humanoid robots, with a lot of drawbacks. You have to allow artistic license for the betterment of the narrative. As long as it doesn't break the suspension of disbelief for the intended audience there's no problem.

An example I like to use is internal narrative. In real life, internal monologue is abstract - you DO NOT think in words unless you are actively thinking about thinking in words. In a life-or-death situation, you do not think in words. But in fiction, we write the thoughts of the characters, for example overdubbing them in anime. To a psychologist, "[This] will never make sense. [This is] just a dumb device to "humanize" the fights. When that's not necessary at all."
