That's a bit hard to say, I mean most of the things that are desirable to her are more about feeling of fulfillment than happiness - doing her job, understanding herself, becoming whole again, directing instrumentality for Shinji.
When do we see her "happy"? When she talks to Gendo in ep 5, end of ep 6, after Shinji wakes up from a comma. Moments like that. So it's really nothing more complicated that connecting to people.
