Patlabor looks pretty neat, but if I understood correctly the ovas and tv series are entirely their own canon. Is there any remarkable difference or can I just watch whatever I want?

Early Days (OVA1) -> Movie 1 -> Movie 2 -> Movie 3 (aka WXIII)
Mobile Police Patlabor - > The New Files (OVA 2)
There are no significant differences between the two, just the plot and what happens in them. The characters are more or less the same, and the interact with each others in more or less the exact same way.

Birdy The Mighty/Patlabor crossover never.
Noa would not survive Birdy's glee.
Noa has her partner and totally not husbando to back her up, though. Birdy has a 'buddy' that she doesn't really get along with in either manga, and perhaps more importantly isn't a physically separate entity.
You're underestimating just how strong Birdy is.

TV and OVA2 are basically a more polished OVA1, you'll love it.
