I'm actually quite surprised. Since the last two years, they've been putting decent adaptations and even Wixoss was fairly decent. Especially considering their early decade slump. I'm looking forward for Shimometa next season.

This will cost them and I know they won't recover the costs from BDs, DVDs etc merch.

I would buy lots if I actually wanted to have a BD collection which one day I might but right now it would be a very expensive hobby.

You don't read the manga I guess. Before the tournament it did a good job on the characters and their interactions. The cooking and the characters were balanced. Then when the tournament comes in the balance is shifted and it's just about the food for about 20 chapters.

Animation is not the same as resolution.
The gods of TV show resolution are still KyoAni, but they refuse to up the resolution, probably because they feel secure with their reputation.
JC Staff probably just spent a good chunk of money on good hardware, making 1080p easier.

Scanner I understand, but since modern animation is digital, it shouldn't change much in ways as films would. Sakuga would still be sakuga by hand and tablets does not correlate to resolution per se, unless having a Cintiq of hi-res is absolutely necessary?
