Based on Kuro, they gain the Servant's powers/weapons and the proficiency to use them, but not complete knowledge/mastery of the Servant. Kuro is skilled at projection but learns from watching Shirou fight and almost definitely didn't know Archer's identity until she met him.
"Grail Mode" Illya however is essentially a magical defense program that was specifically designed to contain and bend Servants to her will, so while in that state she essentially has full control over the Servant, although it's entirely unconscious.

The bodies look too soft and the eyes are weirdly vacant, and the art style itself seems jagged and not smooth, in complete contrast to Hiroshi's original style. Shirou looks like he is 12 years old, and god forbid they show shota Kerry.

The manga's artstyle has evolved (and improved) pretty dramatically, and I would say is certainly less polished and consistent than the anime's artstyle up to the end of 2wei.
Different styles are used as well, characters (particularly Illya and Kuro) can look extremely "soft" to the point of mini-moe in more relaxed scenes like the hot springs or the fujoshi side-chapter, but tend to switch to a more consistent "realistic" artstyle in more serious/action situations.
Characters who are serious in general like Angelica and especially Darius are consistently drawn in the realistic/"hard" artstyle even in their more mild scenes.
Shota Gil probably switches between the two styles most noticeably, going from almost as "soft" and moe as Illya to hard-edged shounen style frequently between chapters.
Shirou himself has a specifically unique atmosphere for his character, with his jagged text and consistently "hard" style. I wouldn't be surprised if he was even animated in a different "harder" style than the other characters. Best analogy I can think of is the rough sketchy style used for characters power-tripping on Spiral Power in Gurren Lagann.

That said, it's all part of the mystery. Why is Ilya growing up at a normal rate? Why did Shirou still end up adopted by Kerry? Why is Sakura still a Matou and still have purple hair if there was never a war? Why is Rin still Zelretch's pupil if there was never a war?

In Prisma, none of the Holy Grail Wars ever happened. The Einzberns developed the ritual on their own and didn't put it in action until Ilya was born around ten years ago, at which point Kiritsugu and Irisveil killed them all.
Ilya probably is aging normally, she's just actually younger than Shirou and everyone else who's at their F/SN age this time. We don't even know if she, Irisveil and the maids are homunculi (though Ilya was still altered in the womb).
There are differences in the history going back hundreds of years, but most of the cast is the same because it makes more sense to keep and make fun of known characters and the actual premise is "What if Ilya was a magical girl?", so only necessary changes have been made.
The situation makes more sense when you start to find out things like

Rin and Luvia clearly have some history which is known enough for Zeltrech to send them on a significant assignment together and consider them as a pair. It's not implausible that two prestigious magus families would have some ties, and if Rin and Luvia's rivalry is any indication might not exactly get along despite the lack of Holy Grail.

In routes that aren't HF she has a severe handicap by comparison because she doesn't have the shortcut of using Ilya's genetic memories with Shirou's Tracing. She'd have to do it the hard way, and Zel didn't expect it to come around for another few generations.
There's probably a good chance she'll make leaps and bounds with it, especially if she gives Shirou a chance to study the blueprints for an extended period of time, but she probably won't finish it.
Unless she and Shirou actually meet Zel and Shirou has a chance to look at HIS Jewel Sword.
