UI, load times when you have more than 20 fonts installed, adjustment layers, raw processing, better healing and content-aware tools, less learning curve due to the UI, Photoshop has rudimentary 3D texturing functions, not sure if GIMP finally has 16 and 32 bit support, layer styles, non-destructive editing in general, actual frames or timelines for animation instead of just a row of layers, probably some more issues.
