Don't pick Tamamo since you don't need 3 zerkers. More than that, she has a reverse-S growth curve so you need to get her to levels 70-80 for her to truly shine. That means you'll desperately need more mats for Berserker ascensions and your Vlad and Herc growth will suffer.
Martha is decent for grinding QP, 3 Arts for quick NP build then punching them with a Dragon. However, we will get a welfare Rider Kintoki soon who's one of the best Riders so her usefulness is limited. I'd say to consider d'Eon since she's good at keeping Berserkers alive. He was a part of the free 4* campaign, right?

Nah, Sakura is just a boring character that takes over the story in a lame way. The writing doesn't make you care about her despite having to in order to justify the changes we see in Shirou. I found Sakura to be a pretty enjoyable secondary character in Fate. I don't think she got any less screen time and development than Taiga, and people have been begging for Taiga route for years.
I think the issue people have with Sakura is that a lot of her character development happened off-screen in the past. We learn about how she sealed off all her emotions to survive Zouken's abuse, how she fixated on a boy trying and failing to jump over a high-jump bar, and how she was sent to be a spy on a rival mage family only to find the first happiness and contentment in her life, all second-hand. It's an interesting journey, but it's all told rather than shown, and I think that rubs people the wrong way.
That said, what got me to like Sakura in Heaven's Feel was her dogged determination to do something about her lot in life, but constantly being denied the chance. She constantly wants to act as Rider's Masters or back up Rin and Shirou in their fight against Zouken, but the worms inside her and her unstable mana situation don't allow it. Seeing the reality of just how out-of-control she was eat away at her but never totally overwhelm her (at least until the Shadow situation got really bad) is what made me care as her situation got bad, and why I was happy to see Shirou choose to save her.

Remember that Cu was being held back by Command Seals during his fights with EMIYA, so he wasn't able to go at it full strength. And it's clear EMIYA stood little chance, even against Cu who was held back.
EMIYA could, theoretically defeat Cu, but he would need a lot of prep time, and need to set the situation up in his favor, and even then he'd be fighting an uphill battle the whole way. He'd probably have an easier time dealing with Herc or Gilgamesh than he would with a Cu that wasn't being held back by Command Seals.

I actually do wonder how EMIYA would fair if he was fighting 100% against Cu, using all the crazy shit we see him pull in the fight against Berserker. The big wing swords, the using Kansho and Bakuya Magnet power so the swords are flying in every direction at once, the fluid switching between swords and bow shots, the full exploitation of projected sword arrow passive abilities, all that shit.
The big problem with Gae Bolg is that it's clearly got a charge up time, and Archer's style of combat at 100% seriousness seems to be about completely relentless and constant attacks from every direction. Cu might be hard pressed to ever have the chance to use his Instagib.
Given that, I think Emiya has a puncher's chance if nothing else. Given the power gap between their Heroic Souls, that's nothing to scoff at.

I'm not discounting PFA, but it's clearly not a perfect omni-directional defense or Gilgamesh could have never killed him. It's not a Tsubame Gaeshi thing where if two arrows come at him from directions where it's literally impossible to dodge both he somehow will.
We all saw how Archers shit works in that Berserker fight. I'm not 100% convinced Cu can just PFA away all of that nonsense, and that's not even counting if he's got the mana to just psuedo-GOB with the Bladeworks.

redman has the advantage of being able to avoid whatever bullshit enemy servants have and just snipe, Cu cant- so if someone summons some monster like Lancelot/Karna/Gawain/Enkidu/whatever, Cu needs to fight them. while redman can just kill the master and move on, this fact makes him(and most archers who can do the same thing) much better than what their pure combat prowess would suggest
same for the caster class, their combat power is low, but their strength is in cheating the HGW system and winning through abrupt means
basically archers, casters and assasins are stronger than what their 1v1 capabilities would suggest , while the other classes need to just manfight
