If you run at a target from enough distance you do a shoulder tackle
Just short of that you do an ultimate tackle
Some characters have an ultimate tackle command from crouching
Once ultimate tackled you can mash 1 or 2 to ground pound them in the face, or 1+2 to arm bar. You can even do some ground pound then armbar for decent throw damage.

Lots of opportunities for counter though. Pressing the same 1 or 2 when they do blocks a hit and ends the grapple. Hiting 1+2 during an arm bar reverses the armbar onto them. I think 3,4, or 3+4 can break the initial grab but I'm not sure

How do I hold on to my beginners luck?

Every time I try a new character I sweep like 15 20 victories easy with only a few losses. Then, as I get settled and go to try to learn some new moves, I suddenly start playing like shit EVERY TIME

And its not like I'm ranking up so I start fighting better people, because I always have it set to +-3 ranks

I think it's best to train at your own pace. Movement is essential, so I think practicing that first is a good idea. Other than that, it's nice to build up experience by fighting other players. I think the first thing you should do is get used to Tekken's movement. Try to get down backdashing since it's essential.
Next would be learning all the basics and all the generic options you have available to you. The basics of different ground mechanics to more advanced things like Chicken commands, which are lost to some veterans.
After that you should start thinking of a character to commit yourself to and learn everything about them. All their frame-data, crushes, strings, combos, and general playstyle. Doing it fully the first time, makes doing it for the rest of the cast very easy, so you can know what to punish.
After that, just general experience.

Don't mash anything if you don't see a grab. You have like a billion frame window to tech throws in this game, just do it on reaction. If you can't tell which hand is forward, just do 1+2 because that stops his most common and most damaging throws. If it's a chain grab, and you don't want to memorize all the different throw breaks, just press 2 and that will stop his most damaging chain throws (RDC and muscle buster).
