Thats difficult, because it varies from person to person, usually a map being good depends on it having a good balance of difficulty and accesibility, but those two can be different from the perspective of two players, for example, Chapter 10 Conquest and 2-E in RD are among the best maps in the whole franchise, but an inexperienced player would assume these are bad, but they are good because

1.-They are challenging, victory doesnt hinge on throwing one unit and hoping it works
2.-The map offers opportunities for all allies to shine, and it offers a variety of enviroments, open places, thresholds, choke points, elevations etc.
3.-It has an interesting objective, routing and seizing arent bad, but a special objective that offers the chance of you being creative and multiple ways to approach it makes it even better
4.- It feels rewarding, you know you beat it because you made a sound strategy able to beat the shit out of what the opponents throw at you

The lunatic sword mastery quest is fucking bullshit.

There's a blue armored spearman on the map and even with an armorslayer I can't do any damage to it.

The axe and spear one weren't nearly as hard. At least hector could be damaged with a heavy spear or with powerful characters.

The option to play to recent recruits' (or all recruits') strengths; Pegasi and Cavalry, for example, could charge toward something on their own while the rest of the army holds back the bulk of the enemy force until their return.
This one's much harder to measure and takes a lot of creativity, but just COOL things. Like Geoffrey's charge in RD where you have to run through the map like a madman to try to escape before enemies bear down on you. That was cool.

I honestly like most of the defense maps on the series. I loved the level in Radiant Dawn where elincia has to stave off that rebel prick. I also loved the one where the Dawn Brigade has to hold off Ike and friends as well as all the laguz. Chapter 10 of Conquest was great too, as you say.
