None of that is happening. The only retcon is those pictures and it's probably to blame on the fact that the lore was still being built then and hardly elaborated on. Character designers used the origin skins as the basis for those images since they needed to release promotional art.

Symmetra switches between having a prosthetic and gaining an arm in her comic because the artists switches between the normal design of Symmetra and her Vishkar skin (which doesn't have a prosthetic).
